Dr. Blanco received a Master’s Degree in Medical Science from MIT and completed an additional Fellowship at Harvard. She is a Clinical Assistant Professor of Medicine at the University of South Florida Morsani College of Medicine. She is board-certified in Gastroenterology by the American Board of Internal Medicine and fluent in Spanish.

Dr. London has been practicing and teaching Gastroenterology in Allentown since 1980. Although graduating from Cornell University and the University of California at Berkeley with degrees in Engineering, he soon realized his interest in medicine, switched fields, and recieved his degree in medicine from the University of Pennsylvania School of Medicine. His training in Internal Medicine and Gastroenterology was also at the University of Pennsylvania. He is Board Certified in both fields. Although his original research was in the field of esophageal disease, he is interested in and sees patients with all gastrointestinal diseases.

Dr. Mendelson was born and raised in Wilmington, Delaware. He attended Cornell University, where he graduated Magna Cum Laude with Bachelor in Arts in Biological Sciences. He completed medical school at Thomas Jefferson University in Philadelphia, where he earned his M.D. and graduated Magna Cum Laude. He then went on to the Hospital of the University of Pennsylvania and completed his residency in internal medicine. After residency, he completed his fellowship training in Gastroenterology and Hepatology at the Johns Hopkins Hospital. He currently resides in Allentown with his wife and two children. He enjoys long distance running, routing for the Philadelphia Eagles, and spending quality time with his family.

Dr. Adam Peyton received his bachelor degree from Rutgers University and his medical degree from Philadelphia College of Osteopathic Medicine. He completed his Internal Medicine residency at Rutgers-Robert Wood Johnson. He then went on to complete both, Gastroenterology and Transplant Hepatology fellowships at Rutgers – NJMS in Newark, New Jersey. Prior to joining Eastern Pennsylvania Gastroenterology and Liver Specialists, Dr. Peyton served as Assistant Professor of Medicine at the University of Miami – Miller School of Medicine. While there, he managed complex patients in the pre and post liver transplant setting while also educating health care professionals including medical students, residents and fellows.

Dr. Peyton conducts clinical research and has numerous publications on the topics of hepatitis C, nonalcoholic steatohepatitis (NASH), liver transplantation and primary biliary cholangitis.  He gives lectures nationally to other healthcare providers on hepatitis C and hepatic encephalopathy.  He continues to be focused on therapies for patients with viral hepatitis, NASH and hepatocellular carcinoma.

Dr. Peyton is a member of the American Association for the Study of Liver Diseases, the American College of Gastroenterology, and the American Gastroenterological Association.

Dr. Peyton  currently works for Eastern Pennsylvania Gastroenterology and Liver Specialists in Allentown, Pennsylvania.  He is triple Board certified in internal medicine, gastroenterology and transplant hepatology. Dr. Peyton has an expertise in hepatitis C, nonalcoholic fatty liver disease (NASH), hepatocellular carcinoma, and liver transplantation.

Additionally, Dr. Peyton is an Adjunct Assistant Professor of Medicine in Surgery of the Perelman School of Medicine at the University of Pennsylvania.

Dr. Hiral Shah currently works for Eastern Pennsylvania Gastroenterology and Liver Specialists in Allentown, Pennsylvania. He is double Board Certified in internal medicine and gastroenterology. Dr. Shah has an expertise in therapeutic/interventional endoscopy specializing in advanced procedures of the biliary tract, pancreas and areas of the GI tract requiring specialized procedural treatments.  He is the program director for the gastroenterology fellowship training program.

Dr. Shah is a fellow of the  American College of Gastroenterology, the American Society of Gastrointestinal Endoscopy and a member of the American Gastroenterology Association.

Dr. Shah completed his training for internal medicine, chief medical residency, and gastroenterology fellowship at Washington Hospital Center/Georgetown University Hospital.  Afterwards, he completed an advanced endoscopy fellowship at Fox Chase Cancer Center.

He enjoys the outdoors and spending his free time with his wife and two children.

Dr. Shah graduated from the Siena college- Albany Medical College Program in the Humanities. While at Siena, he graduated magna cum laude and played division 1 tennis.

During summer vacation in college, Dr. Shah volunteered at Mother Teresa’s Missoinaries of Charity in Calucutta, India.

After completing his residency in Internal Medicine at Albany medical college where he was a junior chief resident, Dr. Shah went on to complete his Gastroenterology and hepatology fellowship at UMDNJ in New Jersey where he was also a chief fellow.

Dr. Shah then completed his therapeutic/advanced endoscopy fellowship at Columbia University where he was trained by the late world-reowned Dr. Peter Stevens.

Dr. Shah joined EPGI in 2008 and was the first advanced endoscopist trained to perform endoscopic ultrasound in the Lehigh Valley.

Since joining, Dr. Shah has performed over 3000 advanced cases including EUS, ERCP and additional interventional endoscopy cases.

As the director of GI endoscopy for LVHN and the Associate Chief of Gastroenterology Dr. Shah strives to deliver excellent personalized care for the patients of the Lehigh Valley and surrounding areas.

She attended the Pennsylvania State University for her undergraduate degree and obtained a Bachelor's of Science in Biology with a minor in Psychology. She then went on to study health sciences at Lock Haven University, where she graduated with a Master's and obtained her certification as a Physician Assistant. She is a member of the NCCPA and PSPA. She has worked with EPGI in both the office and hospital settings since August 2018. In her free time, she enjoys hiking, running, skiing, and other outdoor activities, as well as spending time with friends and family.
